OUR STORY
Cacao Crudo was born in 2010 in Rome from the union of these three great passions: chocolate, travel and research. Over the years we have tasted different varieties of raw chocolate around the world, discovering the slow drying method that leaves the organoleptic properties of cocoa intact while preserving its authentic taste. The cocoa at the base of all our production is single-origin of the prized Criollo variety, coming only from the Peruvian Amazon . With our chocolate we won the award for the most innovative product in the “Food” category at Sana in Bologna in 2014. Today we are the first laboratory in Italy to produce 100% organic, raw, vegan and gluten-free chocolate.
THE RAW COCOA METHOD
Unlike traditional chocolate, Cacao Crudo preserves the organoleptic nuances and nutrients of Criollo cocoa thanks to a processing that never exceeds 42°C. The method involves a short and homogeneous fermentation of the cocoa beans, followed by slow drying and their sanitization using ozone. A stone mill cold grinds the beans without the skins, reducing them to cocoa paste. Sweetened with coconut nectar, the paste is subjected to a thermal shock that makes the chocolate homogeneous and preservable for longer. Finally, each product is packaged in PP material with a high protective barrier and completely recyclable.

At Cacao Crudo we choose not to roast the cocoa beans but to subject them to slow drying. Thanks to this method we best preserve the precious qualities of the cocoa and the other ingredients used. It is a complete, innovative, healthy food that guarantees the introduction of proteins, lipids, carbohydrates, antioxidants, enzymes, various mineral salts and B vitamins, essential to give you the energy you need.

The cocoa in all our products is single-origin Criollo variety from the Peruvian Amazon.
60% of the world's cocoa biodiversity is held by Peru, which is home to rare and valuable varieties. An extraordinary land where we go to work in contact with those who grow Criollo cocoa beans that come from the heart of the Peruvian Amazon to our laboratory. Thanks to the indigenous "Chacra" system, which integrates cocoa cultivation in the forest, any form of deforestation is avoided. We actively support this highly sustainable scheme.
